- 1 cup pearl couscous (or quinoa) cooked in salted water and drained
- 1-2 cups finely chopped arugula
- 1 cup frozen peas- thawed
- 1 zucchini chopped in chunks and grilled or sauteed
- 1 cucumber, deseeded and chopped in chunks.
- optional-- grilled chicken or shrimp
- mint dressing--
- 1 cup greek yogurt
- 10 mint leaves
- 2 basil leaves
- 1 garlic clove- grated
- small bunch of chive
- 2 tbsp vinegar
- salt, pepper, lemon juice
Mix salad ingredients together in a bowl. Blend the dressing in food processor or blender and pour over salad. Mix well. get creative with the herbs. Mint should be the main flavor but you can swap out basil and chive for others like tarragon, thyme, sage...
