- Half jalapeno diced small
- half a large red bell pepper diced small
- half red onion diced small
- 3 cloves garlic minced
- 1 lb. Bacon- cooked and crumbled
- 3 tbsp ranch powder
- 1 lb. sour cream
- 1 lb frozen corn
- 1 bunch green onion chopped
- 8 oz. sharp cheddar cheese
- 1/2 cup grated Parmesan
- 1 to 2 cups Ranch dressing
- 1/4 to 1/2 cup milk
- salt and pepper to taste
Saute the jalapeno, bell pepper, onion, and garlic until soft and just starting to brown.
Mix everything together with enough milk/ranch to get it to the thickness you want.
This dip is great. It's smoky and cheesey, but not too heavy dip for chips or crackers.
