Prime Rib

 The night before, season your roast. 

I recommend softening a bunch of garlic in oil and blending into a paste. Slather the meat with that then season with a blend of herbs (Italian seasonings or thyme and rosemary) plus salt, pepper, onion and garlic powder. 

Place it in a roasting pan and let it chill overnight uncovered. 

Let the meat come to room temp  (2-3 hours) before beginning to cook. 

Preheat the oven to 250 degrees F. Roast uncovered until internal temp reaches about 115-118 for medium rare (it will continue to go up as it rests). 

It should take 20-30 minutes per pound to reach temp. Invest in a thermometer that you keep in the meat and has an alarm function when it reaches a certain temp.

Rest for at least 30 minutes. You can take the pan drippings at this point to make a jus. 

Just before slicing and serving, preheat the oven to 500 and reverse sear the meat by cooking in the super hot oven just until crisp and brown on outside. 

Slice immediately (no need to re-rest). 


Coconut lime chicken

 1 small onion-minced

2 cloves garlic-minced

3-4 inches ginger root grated with a zester

3 limes (zest all, juice 2, slice 1)

 5-6 chicken thighs

1 can coconut cream

1 tsp honey

2 tbsp better than bullion chicken paste

Cumin

onion and garlic powder

Salt and pepper


Saute the onion in oil till just browning.

Add in garlic. Saute for one min. Move to bowl. Season chicken with cumin, onion and garlic powder and salt and pepper. Brown both sides. Deglaze pan with juice of one lime and coconut milk. Add back in chicken, onion and garlic, ginger, honey, and bullion paste. Stir and simmer. Season to taste with more cumin, onion and garlic powder, and salt and pepper as needed. Simmer till chicken is cooked through. Before serving stir in juice of 1 more lime. 


Serve over rice with green onion and lime wedges. Could also serve with cilantro or parsley. 

Optional, before cooking chicken, soften other veg like carrot and bell pepper. Add in with everything else.

Sausage Rolls

 

Sausage rolls

 

·        1 lb ground pork sausage (Fred Meyer store brand has worked best for us of grocery store options- WinCo ended up dry)

·        1 package puff pastry

·        1 cup Bread crumb

·        1 tsp. Ginger

·        ¾ to 1 cup fresh Sage chopped and loosely packed

·        ½ tsp. nutmeg

·        1 tsp. Onion powder

·        Mustard (dijon)

Preheat oven to 350 degrees.

Mix everything but the mustard and puff pastry together and split into 2 equal portions,


Roll out the puff pastry and cut each piece into 12 equal rectangles (24 total). Put a small dot of dijon mustard in the middle of each piece and wet the edges slightly.


Each half portion of sausage mixture should be split into 12 equal portions again. And placed on top of the mustard dot. Wrap the sausage in the pastry and seal edges.

 







Bake at 350 for 20-25 minutes or until puff pastry is golden and sausage is fully cooked.

Koruma

5 cardamom pods

1 tsp each of fenugreek, coriander

2 tsp fennel

12 curry leaves

                Toast These spices

4-5tsp turmeric

1 piece ginger

1-2 red dried red peppers

1/4 cup almonds

Small handful cashew


Blend these with coconut milk and oil until smooth. 


Simmer with onion chosen veggies and or chicken and 1 star anise.

Coconut Macaroon


  • 4 egg whites
  • 1/2 tsp. Salt
  • 1tsp. Vanilla
  • 1/4 cup flour
  • 1 pkg sweetened coconut flakes (14 oz)

For a toasted flavor- toast the coconut on a cookie sheet until lightly golden and let cool before the remaining steps. 

Whip the egg whites into stiff peaks. Sprinkle the salt and flour over and pur in the vanilla and coconut. Fold gently in gently. 

Scoop in medium/large heaps on a silicone baking mat. Bake at 350 for about 15 minutes. Let cool on the cookie sheet.

Taco layered casserole

  • 1/2 onion, diced
  • 1 lb. ground beef
  • taco seasoning
  • salsa
  • tortillas(5)
  • 1 can refried beans
  • cheese- grated


Chop up an onion and sautee it in a bit of olive oil until it just started to brown. Add in the ground beef. Cook until it starts to brown, drain off excess fat if necessary. 

Add in the taco seasoning and season to your desired level. (cumin and cayenne can add some spice and complexity. Then add in about 1/2 a cup of your favorite salsa. 

Spread refried beans on 4 of the five tortillas. 

In a round casserole dish (greased), layer tortilla (with beans on top) meat, and cheese, top with the remaining tortilla (no beans) and top with cheese. Bake in a 350-degree oven until the cheese is melted.

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1tsp vanilla
  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 teaspoon salt
  • 2 cups krispy rice cereal
Cream together butter and sugars. Add in vanilla and egg. Slowly mix in the dry ingredients (except cereal). once combined, gently mix in the cereal. 

for the dough into cookie dough balls. Chill for 10 minutes. Slightly flatten the ball. 

Bake cookies at 375 degrees for 10 minutes

Banana Bread


  • 1/2 cup butter, softened
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 4 bananas (very ripe)
  • 1/4 cup sour cream
  • 2 eggs
  • 1tsp. vanilla
  • 1 3/4 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt

Preheat the oven to 350.

Cream together butter and sugar. Mix in the bananas, eggs, sour cream, and vanilla. Mix together the flour, salt and baking soda and add them slowly to the mixer and mix until just combined. 

Bake in a greased, floured loaf pan for 55-65 minutes. 

Chocolate Therapy Cookies

  • 1.5cups butter, softened
  • 1.25 cups granulated sugar
  • 1.25 cups packed brown sugar
  • 1 Tb vanilla
  • 2 eggs
  • 2..5 cups flour
  • 1.5 cups cocoa
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips
  • 2 cups dried cranberries
  • 1 cup chopped pistachios
Heat oven to 350. In a large bowl, beat butter, sugars, vanilla, and eggs on medium speed until light and fluffy. Stir in flour, baking soda, and salt. Stir in chips, cranberries, and nuts.
On ungreased cookie sheets (I use silicone mats) drop dough by tablespoonfuls or #40 cookie/ice cream scoop, 2 inches apart. Flatten slightly. Bake about 10 minutes. The centers will be soft. Cool 1-2 minutes, remove to a cooling rack.

You can double the recipe and freeze cookie dough balls to make any time.

Mandarin Orange Cake


  • 1 cup sugar
  • 1 cup flour
  • 1 egg
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • tsp. vanilla
  • 1 can mandarin oranges
Put all the ingredients in a bowl. Beat with a mixer until the batter is smooth. Pour into a greased 9x9" pan. Bake at 350 degrees for 30-35 minutes until firm/set. 

  • 3/4 cup brown sugar
  • 3 tbs. milk
  • 3 Tbsp. butter
Combine in a a pot and bring to a boil. while still boiling, pour over the cake as soon as it comes out of the oven. Be careful it doesn't over flow the pan. Pour slowly so it soaks in as you pour.
