Rhubarb spice cake


  • 2 cups diced rhubarb
  • 1/2 cup sugar
  • 1/2 cup shortening
  • 1 egg
  • 2 cups flour
  • 1 tsp. baking soda
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 cup buttermilk
  • 1 tsp vanilla
  • dash salt

Combine rhubarb and 1/2 cup sugar. Set aside.


Mix all other ingredients well. Add rhubarb. Bake at 350 degrees for 45 minutes in a 9x9 pan.
